Shiitake Sour Cream Sauce
Great as a sauce for sautéed pork or meuniere! Dried Shiitake are great to use in sauces because they make the umami of the meat much richer. Have you ever used sour cream? It is made by fermenting fresh cream with lactic acid bacteria and is often used in sweets. When you combine it with Shiitake, you get a ridiculously delicious sauce!
Add white wine, sour cream, and a little soup stock to the Shiitake broth, bring to a boil, and simmer until thickened, and you have a special sour cream sauce. Pour this sauce over the meat, and you will have the taste of a top restaurant.

Steps

Place the dried Shiitake mushroom in a bowl and cover with 90ml water. Soak for 30 minutes, reserve the liquid.

Put the oil, set over medium heat, add drained and squeezed shiitake mushroom in a pan, and cook for about 1 minute.

Add sour cream, white wine, soup stock, and all of the reserved liquid and bring to boil, lower heat, and simmer until the sauce is thick and seasoned with salt and black pepper.

Serve with pork saute, meuniere,etc. Good as a dip with chips or vegetable crudités.
